Punkin' Pie


I hope everyone had a fabulous holiday! Mine was definitely relaxing, I ate plenty and gave and received lots of presents, so a definite improvement over my Thanksgiving (no flu!).

This year I made my first-ever pumpkin pie. I wanted to branch out from the usual recipe (I believe the one from the back of the can of Libby's pumpkin pie filling). This was met with a lot of gripes from family members who didn't want me to do anything "weird" with the pie. Now, I don't eat pumpkin pie myself, so I couldn't tell you if what I did was wild and crazy, but I knew that Rose Levy Beranbaum would not steer me wrong with her pumpkin pie recipe. The result? C'est magnifique! There were no complaints around the table, and much praise to the ground gingersnap/pecan mixture that lined the crust. Compared to some of Rose's more complicated recipes, this one proved to be very easy, and everyone loved Rose's suggestion of doing the checkerboard crust. Definitely a recipe to keep on hand for next year!

Glad you were well for the holiday. I seem to be sick all of the time.
Is that you holding the pie??? It looks very delicious, and I like the crust idea. Much easier than dealing with dough.

My family is always telling me not to do "weird stuff" when I cook. I hate it.

Emiline...yep, that's me holding the pie - had hoped the boyfriend would make me a little blurrier when editing the photo, but no such luck :)

Actually, it is a traditional pie crust (I've finally gotten the hang of a good crust this year), but you grind gingersnaps and pecans and line the crust with that before adding the filling...it was very well received by the family!
